Squash Patties

1 cup cooked spaghetti squash

3/4 oz shredded cheddar cheese

1/4 cup chopped scallions

1 large egg, lightly beaten

2 tsp flour

Salt and pepper to taste

Combine all ingredients in a medium bowl. Shape into two patties.

Spray nonstick skillet with Pam. Cook patties over medium heat until lightly browned, about 3 minutes. Turn patties over and cook until other side is lightly browned.

1 serving, Exchanges= 1 protein, 2 vegetables, 1 dairy
