BMI (Body Mass Index)

BMI is a standard height to weight ratio useful for classifying risks associated with weight gain.

BMI= (weight in pounds*703) divided by height in inches squared. Or you can easily google a BMI calculator with your computer and plug in your numbers.

The World Health Organization (WHO) classification has been developed using the following grading system that links increase in BMI to increased health risks.

<18.5           Underweight

18.5-24.9     Healthy weight

25.0-29.9     Overweight

30-39.9        Obese

>40               Severely obese

Dinner

Squash Patties

1 cup cooked spaghetti squash

3/4 oz shredded cheddar cheese

1/4 cup chopped scallions

1 large egg, lightly beaten

2 tsp flour

Salt and pepper to taste

Combine all ingredients in a medium bowl. Shape into two patties.

Spray nonstick skillet with Pam. Cook patties over medium heat until lightly browned, about 3 minutes. Turn patties over and cook until other side is lightly browned.

Flattened Chicken Breast

Slice a skinned and boned chicken breast horizontally. Pound thin and evenly with a mallet. Season with salt and pepper. Flash fry in a hot pan that has been sprayed with Pam. Place on a bed of spinach (1 cup) and put a variety of vegetables on top (1 cup). I used fresh cooked beets, radishes, and English cucumbers. Top with 1 cup of mandarin oranges. I used 1/2 a piece of Naan on the side.
